Peanut Butter and Jelly Muffins


As a child, I was always a fan of peanut butter and honey sandwiches. Recently, however, I have discovered the goodness of peanut butter and jelly. I decided to revamp the childhood classic into a delicious breakfast treat suitable for kids and adults. This recipe is simple, quick, and requires relatively few ingredients, most of which I had on hand. Of course all of the ingredients required can be found in either Varsity Marketplace, Varsity Morgan, or Varsity Towers. If you are purchasing some of these ingredients for the first time, such as flour or sugar, you will now have several baking staples to use in future cooking and baking endeavors. Based upon the calculated cost per serving of each ingredient, these muffins will cost you $7.14 or $0.60 per muffin. This cost does not include the cost of cooking spray or salt.

Peanut Butter and Jelly Muffins:
Yield: 12 muffins
Total Cost: $7.14 (does not include cost of cooking spray and salt)
  • cooking spray (optional)
  • 2 cups flour
  • 1 1/2 teaspoons salt
  • 1 tablespoon baking powder 
  • 1 cup milk
  • 2 eggs 
  • 2/3 cup sugar
  • 1 cup creamy peanut butter
  • 1/3 cup vegetable oil
  • 1/2 cup strawberry jelly
  • 1/4 cup sugar
  • Nutter Butter Bites (3 oz bag)

Preheat oven to 375 degrees. Spray muffin pan with cooking spray or line with baking cups. Place Nutter Butter Bites in a plastic bag and crush into small pieces. Set aside 1/4 cup crushed Nutter Butter Bites.

Stir together flour, salt, baking powder, and crushed Nutter Butter Bites. Add milk, eggs, 2/3 cup sugar, peanut butter, and oil to bowl. Stir ingredients until moistened. Do not over mix. 


Fill prepared muffin cups with half of the batter. Place 2 teaspoons jelly in the center of each muffin. Evenly divide remaining batter between muffin cups. Combine 1/4 cup Nutter Butter Bites with 1/4 cup sugar and sprinkle evenly over muffins. 


Bake 20 minutes or until a toothpick inserted comes out clean. Remove from oven and allow to cool in pan for at least 5 minutes. Serve warm.

  1. These muffins were heaven to my taste buds. The peanut butter and jelly combination was a perfect and satisfying addition to the muffins. I would eat this concoction for breakfast, lunch, dinner, or dessert!
